Just to clarify, how long is long and i assume your barber meant styling, not taking care of it, yes? Else im not really sure what he meant with gel.
Doesn't styling include taking care of the hair as well? I'm always under the impression hair that is not well taken care of is really hard to style. My hair was long for Indonesian male standard. Enough to cover the collar if I were wearing a clothing with one.
For someone whose method of "hair treatment" is shampoo every two days this thing is hard.

Well yeah... unhealthy hair doesnt look very good, but no, styling is basically what your hairdresser is doing, making it look good while taking care of it is washing n stuff - the things you do so its healthy and doesnt break.
So about shoulder lenght, gotchu. Does your hair get oily/fatty quickly? Taking care of it basically comes down to knowing your hairtype, using apporative products for it and avoiding uneccesary strain on it (to avoid breakage, wouldnt want split ends, do we?).
With the hairtype your hairdresser can probably help you better than i could since i cant really see your hair here, so ask him bout it, he'll most likely be able to reccomend you the products for it too... but the thing with products is, you gotta try them out and see how it works. Sometimes it just doesnt really work and you gotta try another (this is partly why we have so many cosmetics if you were wondering, always looking for the best shampoo/conditioner, heh.).
Avoiding strain... again, depends. I swear by letting my hair air-dry (without the blower, the heat makes my hair all frizzy), but some say its better to blowdry them. (both heat and dampness can cause damage, lmao...) Sis uses the blowdryer but she uses a conditioner that supposedly heatproofes her hair. You just gotta try out what works for you.
In any case, how do you initally dry your hair with the towel? Dont do this rubbing all over the place thing, instead wrap the towel around your head (or hair if its long enough) and press the water out of it. Kinda like how you'd wrough water out of cloth.
And since your hair is so long, some hairbands probably are a good investment, if only for when you want to sleep. Tie your hair to a ponytail and on the third/second twist (depends how tight you need the band) just dont pull the hair fully so rather than a ponytail you have this kinda ball thing. This way you can avoid getting knots in your hair while you sleep.

I always do the rubbing thing to dry my hair. I don't think I've ever had problems because of it though.
As for the product thing, I'm not too fond of trying every single one until I find one that works. I did use a hair styling cream years ago, and I don't think it did any damage, but it did make my hair feels a bit oily (is that what it's supposed to do?). I never had any idea when to use products like these. Once a day? Before going out? I almost always wash my hair with water when I take a shower (which is twice a day) and I'm pretty sure it washes away the gel/cream whatever product I'm using.
